Cafe-Style Grated Carrot Salad
I was excited to make this week's recipe.  As I was growing up my mom's favorite salad to make was a carrot salad with raisins tossed in a mayonnaise dressing.  Dorie's version of the salad is almost  the same except it is tossed in a Dijon Vinaigrette.
The salad is very easy to make.  You start by grating a pound of carrots. This is the hardest part  of the salad.   Toss in some raisins and walnuts.  Then toss everything together in a tangy Dijon Vinaigrette.
The salad was quite tasty.   As Dorie stated in the recipe, the salad played the sweet against the sharp.  I served the salad immediately after I tossed it in the dressing.  It was liked by all in the family - something that doesn't happen often in a family of six.  This recipe is a keeper.

  3. Looks great, and I agree, fun to have a new version of an old favorite...I grew up with a mayo based version as well, and we really loved this one! Yours looks beautiful...but then it would be hard to not look beautiful with these gorgeous carrots, right? Have a great weekend!

  6. Oh, it is nice to read that you liked this Grated Carrot Salad. It was a nice and easy recipe and we love this type of raw vegetable salad (without raisins and nuts).

  7. When we were kids didn't our Moms add mayo to everything? At church potlucks, as a kid, I remember having carrot salad with mayo dressing and canned fruit added also. Don't recall the raisins. Maybe. I went the food processor route to grate my carrots and it was easy. That's cheating, perhaps, but, as I said, easy. Your salad looks delicious. Most of us liked this, didn't we?
