Baked Asparagus With Parmesan
It is asparagus time.  Those tender stalks of goodness and flavor are plentiful this time of year.   Asparagus are not difficult or time consuming to prepare.  I like them to be slightly crunchy. Mushy is a no no.  As I was reading through my Blog roll, I found this recipe for Baked Asparagus With Parmesan from Simply Recipes.  This recipe called for baking the asparagus.  I usually steam or grill my asparagus.  I decided to give baking them a try.  This recipe was easy to make.  You start with a pound of asparagus and arrange them on a baking sheet lined with foil.  Coat the asparagus with olive oil and sprinkle with salt, pepper and Parmesan cheese.  That is it.  You then put them in a 400 degree F oven and bake then until the cheese begins to brown about 8-10 minutes.  Your veggies are done and ready to serve. Told you it was easy. Not only do they taste delicious there is very little clean up.
The asparagus are slightly crunchy and the Parmesan cheese adds a wonderful flavor.  My family told me these were the best asparagus I ever made.

  2. Geraldine, these are the kind of recipes that I really enjoy - oven-baked vegetables with just a sprinkling of pepper and salt and some delicious Parmiggiano Reggiano - sounds and looks delicious!
