Christine's Simple Party Soups
Today in French Fridays With Dorie we made a very simple soup.  There were three different soups to make, Asparagus, Broccoli, and Red Pepper.  I made only the Broccoli Soup.   The main star of these soups are the veggies.

For the Broccoli soup,  you just cook the veggies, broccoli and zucchini in some chicken or vegetable broth.  If you do not have any broth on hand, you can use bouillon cubes and water.  The liquid of your choosing is brought to a boil and then the cut up veggies are dropped in and seasoned with salt and pepper.  Cook until the veggies are tender.  The soup is then pureed in a blender or food processor.  I used a stand blender and had a very smooth puree.  Now you have a decision to make - do you want to serve the soup hot or cold.  I chose to serve mine cold so I put it in the fridge until  I was ready to serve it.


I poured the soup in glasses and topped the soup with a cream topping that was flavored with a pinch of salt and some ground cardamom.

The Broccoli soup was wonderful.  A velvety texture with a rich veggie flavor.  The soup was a beautiful color and the splash of cream added extra richness and color.

  3. I didn't try the soup chilled, I froze the leftover. I made the asparagus, so maybe I'll make the broccoli this weekend and enjoy the chilled version. Thank you for sharing!

  4. Of all three, the broccoli was my favorite. Not a chilled soup fan so what I kept for myself I gobbled up hot.

  8. I tried the stick blender first and had to switch to the standing blender because it just wasn't getting the job done. Happy to hear that I'm not the only one who enjoyed this week's offering.

  9. I didn't try this cold, but really enjoyed the broccoli version hot. Yes, a stand blender is what's needed to make this one smooth. Looks so delicious, Geri!

  13. We didn't try the soups cold, they were delicious warm. I will put these on our rotation, especially for "chilled" summer lunches. Beautiful color of your soup!

  17. I made all three for the heck of it but I ate all the broccoli soup myself - so you picked an awesome one to test :) I like it to begin with and this version was lovely. Hubby likes asparagus as well as red peppers so he ate the rest of the others. We both did taste test all 3 - hot and cold. Amazed they all tasted so well both ways and that it was all so simple. And had no idea about adding the cream until this recipe. Fabulous.

  18. I am sure I have never tried broccoli soup chilled. My eldest daughter gobbled the broccoli right up and declared it a success.
