Nutritional Yeast

What is that yellow flaky stuff.  That, my friends, is Nutritional Yeast.  Nutritional Yeast is also referred to as nooch.  It is a wonderful ingredient that was used in vegan recipes. However,  today you can find it also as in ingredient in non vegan recipes. When I first saw Nutritional yeast as an ingredient, I wasn't familiar with it.   I then started to do some research on this unknown ingredient.

Nutritional Yeast is inactive yeast. It is a dead yeast strain known as Saccharomyces cerevisiae. Bakers use this strain in their baked goods.  The difference is the strain has been pasteurized for nutritional yeast.

What are the health benefits of nooch?  Nutritional yeast is packed with a lot of vitamins and minerals. It is great source of fiber and protein.  A very tasty source,I might add.
You can buy Nutritional yeast in health foods stores and even in your local grocery stores.  It is usually in the bulk foods area.  It can also be packages, or in jars or canisters.

To me,Nutritional yeast has a nice cheesy, somewhat nutty flavor to it.  nutty   After being introduced to Nutritional yeast, I love to sprinkle it over pop corn, scrambled eggs, salads, roasted broccoli -  just to name a few uses.   I will soon be posting a recipe where it is used in Chex Mix so stay tuned.

Next time you are at the store pick up some nooch and give it a try.  You will be truly amazed at its wonderful flavor.
