Sardine Rillettes
It has been decades since I have eaten sardines. They were not high on my food list. So this week I got reintroduced to sardines. Our cooking project for "French Fridays With Dorie" was Sardine Rillettes. Sardines are combined with cream cheese, onions, lemon juice, parsley, cayenne, salt, and pepper. The result is a spread which you can spread on crackers or use as a filling. I spread the rillettes or multi grain rice crackers. This recipe was very quick and easy to make. However, I must admit, I am still not a sardine fan. They were alright but not a favorite. You can find this recipe on page 25 in "Around My French Table."

I just couldn’t bring myself to make this one…I’m not a fan of sardines! Yours does look very good!
ReplyDeleteYes, I trudged ahead, but it was not easy....I am very picky about fish & sardines- well, let's just say big NO. My husband & his good friend drank beer & lapped the rillettes up on crackers- go figure???
ReplyDeleteI think I would enjoy these, but I could never bring myself to eat a sardine just by itself. Sometimes making a dish with an ingredient that you really do not care for can surprise you. I guess that I what these bake along are all about, getting you out of the box. I am sure I would have never sought out a recipe for sardines, but experimenting is always fun. Enjoy the weekend!
