Grilled Parsley Lime Chicken



This is one of my favorite grilled chicken recipes.  I found this recipe on Simply Recipes website.  Instead of using cilantro, I used parsley.  I did not have any cilantro in the fridge and I did not feel like going to the store.  Besides, parsley is a cousin to cilantro.

I flattened my chicken breasts - I find they grill much better that way and placed them in a lime marinade.  The marinade consisted of lime zest, lime juice, olive oil, parsley, and spices.  I let them marinate in the fridge for about 7 hours.

When I was ready to grill the breasts, I removed them from the fridge and preheated the grill.  Before placing the chicken on the grill I rubbed some olive oil on them.   I placed the chicken breasts on the hot grill and grilled them on each side for a few minutes.  Be sure the breasts are cooked through before serving.

The chicken was delicious. It had a nice lime zing to it - not too overpowering just right.  The family really liked this recipe.  Will be making this recipe again, I am sure.

Grilled Parsley Lime Chicken
From Simply Recipes Adapted Very Slightly From My Southwest Kitchen

 Ingredients:
4 boneless skinless chicken breasts
2 tablespoons olive oil
Grated lime zest from 2 limes
Juice of 2 limes
3 tablespoons chopped parsley
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
Olive oil

Directions:
1. Flatten the chicken breasts with a mallet (I used the flat side) between two pieces of plastic wrap.  Be sure the breasts are an even thickness.
2. In a large bowl, stir together the 2 tablespoons olive oil, lime zest, lime juice, parsley, sugar, salt, and black pepper.
3. Place the chicken breasts in the bowl, flipping to be sure both sides are coated with the marinade.  Cover the bowl with plastic wrap.   Place in the fridge for 4 or more hours.

4. Remove the chicken breasts from the fridge. Preheat the grill on medium high heat.
5. Remove the breast from the  marinade and pat dry with paper towels.  Brush some olive oil on both sides of the breasts.
6.  Place the breasts on the hot grill and cook for a few minutes before turning over.   Cook a few minutes more on the other side.   Be sure the chicken is cooked through before serving.

Bratwurst In Beer

It's summertime and that means time to bring out the grill.   We are proud owners of a new grill this year.  It has been a joy grilling on it.  We have grilled the usual to break it in, hamburgers, hot dogs, steaks, chicken, brats.  Everything has tasted delicious.

Today, I want to share a favorite recipe of ours for Bratwurst In Beer.  Bratwurst are grilled and then placed in a pot or  disposable foil roasting pan with butter, onions, garlic, and beer.  Keep them in the beer until they are ready to serve. 


These are the best tasting brats around.  The beer adds a great flavor as do the onions and garlic.  You can serve the brats with the onions but we prefer sauerkraut. 

This is perfect for your Fourth of July Celebrations.  

Bratwurst In Beer

Ingredients
1/4 cup butter
2 medium onions, sliced into thin rings
4 garlic cloves, finely chopped (optional)
3 to 4 (12-ounce) cans cheap beer (Wisconsin fans insist on Pabst Blue Ribbon)
8 bratwurst links
8 small, crusty hoagie rolls
Whole-grain mustard
Dill pickle spears
Preparation
1. Prepare the grill for a medium-hot fire.
2. Place the butter in a medium disposable foil roasting pan. Place the pan on the grill rack and cook until the butter melts. Add the onions and garlic (if using); cook until softened, three to five minutes. Add the beer and bring to a simmer. Place the pan on the low heat zone and keep the onion mixture warm.
3. Place the bratwurst on the grill rack. Grill, turning occasionally, until evenly charred, four to five minutes. Transfer the bratwurst to the onion mixture and let stand until ready to serve.4. With tongs, place the bratwurst in the rolls. Serve with the onions, mustard, and pickle spears.

Beer Can Chicken


I  have heard of Beer Can Chicken but I never made it.   After making this recipe, I do not know why it took me so long to make it.  This recipe is very easy to make and the chicken is indescribably delicious.  Moist, tender, flavorful, meat falling off the bone, this chicken is how a chicken should taste. 

The first step is to heat up the grill.  I cooked my chicken on a gas grill.  You only lite one side of the grill.  Once the grill is heating, it is time to season the chicken.  The recipe I used seasoned the chicken with some olive oil, kosher salt, pepper, and fresh thyme. First you rub olive oil over the chicken and then rub in the spice mixture.  Next, you get the beer can ready to go.

You only use half a can of beer.  I  lightly sprayed my can so it would not stick to the chicken.  I placed the beer can on a baking sheet and slipped the chicken over the can.  I transferred the chicken to the grill and cooked for about  1 1/2 hours.   Like the recipe said leave the chicken for about 1 hour before checking on it.  Your chicken is done when it registers 160 - 165 degrees F.  I slid a large grilling spatula under the chicken and used tongs to place it on my baking sheet.

Remove the chicken from the beer can, carve and serve.
