Chicken Cordon Bleu Skillet

 Chicken Cordon Bleu is one of my favorites so I was excited to try this recipe.  This meal is very easy to prepare and tastes delicious.  Start by cooking some egg noodles.  In a skillet, add some butter and cook up your diced chicken.  I added  some mushrooms to the chicken.   I then added the remaining ingredients and mixed well.  When the cheese was melted and the chicken no longer pink, I added the noodles, stirred, heated through and served.

It was a hit.  The family enjoyed the meal and it was easy to prepare.

Chicken Cordon Bleu Skillet

Ingredients:
8 ounces uncooked medium egg noodles (about 5 cups)
1 pound boneless skinless chicken breasts, cut in 1-inch pieces
3/4 cup sliced mushrooms
1/2 teaspoon pepper
1 tablespoon butter
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup shredded Gruyere cheese
1/2 cup cubed fully cooked ham
1/4 white wine
Fresh parsley for garnish

Directions:
1. Cook noodles according to package directions; drain.
Meanwhile, sprinkle chicken with pepper.
2. In a large cast-iron or other heavy skillet, heat butter over medium-high heat; saute chicken just for about 2 minutes and then stir in the mushrooms.  Cook for another 2 -3 minutes.
3.  Stir in soup, cheese, ham and wine; cook, covered, over medium heat until cheese is melted and chicken is no longer pink, 6-8 minutes, stirring occasionally. Stir in noodles and warm through. Sprinkle with parsley.



Makes 4 servings

Skiillet Baked Ziti


Wondering what to make for dinner tonight.  Why not try Skillet Baked Ziti. This is a very tasty dish that is easy to prepare and maybe a future family favorite.  I like this dish because it is all cooked in one pan and it comes together nicely. It also tastes great the next day - if you have any leftovers.


Skillet Baked Ziti
From Our Best Bites Adapted Slightly by From My Southwest Kitchen

Ingredients:
1 pound ground beef
1 (28-ounce) can crushed tomatoes
1 tablespoon olive oil
6 medium cloves of garlic minced
1/4 teaspoon red pepper flakes
Salt
3 cups water
12 Ounces (about 3 3/4 cups) ziti or penne pasta
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup torn fresh bail leaves or 1 tablespoon dried basil added to the crushed tomatoes
Black pepper
1 cup shredded mozzarella cheese

Diretions:
1. Adjust an oven rack to the middle position.  Preheat the oven to 475 degrees F.
2. Heat a 12-inch or larger oven-safe skillet on medium high heat and add the olive oil.  Brown the ground beef.   Drain the beef of excess fat.
3. Add the garlic and red pepper flakes to the ground beef.  Cook until fragrant.  Stir in the tomatoes and 1/2 teaspoon salt.
4. Reduce the heat to medium-low and simmer gently for about 10 minutes stirring occasionally.
5. Stir in the water and add the pasta.  Cover and increase the heat to medium-high.  Stir often and cook until the pasta is tender about 15-20 minutes.
6. Stir in the cream, Parmesan cheese, and the basil if using fresh. Season with salt and pepper to taste. Sprinkle the mozzarella cheese over the top.
7. Place the skillet in the oven and bake until the cheese has melted and is a nice golden brown about 10-15 minutes.
8. Remove from oven and serve.

Makes 4-6 servings

Chicken Noodle Skillet

Skillet meals are some of my favorite dinners to make.  They are simple, budget friendly, and require little clean up.  In this recipe, cooked chicken is paired with mushrooms, carrots, egg noodles and celery.  All of the ingredients are cooked in a sauce of chicken broth and cream which has been seasoned with some onion powder, dried thyme, dried parsley,  salt, and pepper.   When the skillet is done everything is sprinkled with grated Parmesan cheese.  Cheese just makes everything better.

You have a delicious dinner with little fuss that is made in about 30 minutes.



Chicken Noodle Skillet

Ingredients:

1/4 cup butter
3/4 cup diced carrots
3/4 cup diced celery
4 ounces sliced white mushrooms
1/4 cup all purpose flour
3 1/2 cups chicken broth
1/2 cup heavy cream
1 teaspoon onion powder
1 teaspoon dried parsley
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
6 ounces wide egg noodles ( about 4 cups)
1 1/2 cups cooked and shredded chicken
Grated Parmesan Cheese

Directions:

1.  In a large skillet, melt the butter over medium-low heat.  Add the carrots, celery and mushrooms.  Saute in the butter until the vegetables are soft.
2. Add the flour and cook for about 3 minutes.  Slowly whisk in the chicken broth and cream.  Stir in the onion powder, dried parsley, salt, garlic powder, dried thyme and ground black pepper.  Bring to a simmer  over medium-high heat.  Add the noodles and cook until the noodles are soft - about 5-7 minutes.
3.  Add the chicken and heat through.   Taste and reseason if necessary.  Remove from heat and sprinkle with grated Parmesan cheese.    Serve.

Lemon Chicken Skillet Dinner

The other night I made a delicious chicken meal that had mushrooms, potatoes, and green beans cooked with chicken breasts.  They were cooked together in a nice herb sauce.  The chicken was moist, tender, and flavorful.  The veggies were also very flavorful and not over cooked. 

This meal  was very easy and it came together nicely.   You cook your potatoes for about 12 minutes or until they are tender.  While the potatoes were cooking, I started preparing the chicken.  Once the chicken was cooked, the potatoes, mushrooms, and thyme were added to the skillet. A flour mixture, chicken stock, lemon slices, and beans were then added to the skillet and cooked until the beans were crisp.  That is it.  Your dinner is ready:)


Lemon Chicken Skillet Dinner
From My Recipes

Ingredients

12 ounces baby red potatoes, halved
1 tablespoon olive oil, divided
4 (6-ounce) skinless, boneless chicken breast halves, pounded to 3/4-inch thickness
3/4 teaspoon kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
2 thyme sprigs
4 ounces cremini mushrooms, quartered
1 tablespoon chopped fresh thyme
1/4 cup whole milk
5 teaspoons all-purpose flour
1 3/4 cups unsalted chicken stock (such as Swanson)
8 very thin lemon slices
1 (8-ounce) package trimmed haricots verts (French green beans)
2 tablespoons chopped fresh flat-leaf parsley

Preparation

1. Preheat oven to 450°.
2. Place potatoes in a medium saucepan; cover with water. Bring to a boil, and simmer 12 minutes or until tender. Drain.
3. Heat a large ovenproof skillet over medium-high heat. Add 1 teaspoon oil to pan. Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Add chicken and thyme sprigs to pan; cook 5 minutes or until chicken is browned. Turn chicken over. Place pan in oven; bake at 450° for 10 minutes or until chicken is done. Remove chicken from pan.
4. Return pan to medium-high heat. Add remaining 2 teaspoons oil. Add potatoes, cut sides down; mushrooms; and 1 tablespoon thyme; cook 3 minutes or until browned, stirring once. Combine milk and flour in a small bowl, stirring with a whisk. Add remaining salt, remaining pepper, flour mixture, stock, lemon, and beans to pan; simmer 1 minute or until slightly thickened. Add chicken; cover, reduce heat, and simmer 3 minutes or until beans are crisp-tender. Sprinkle with parsley.

Southwest Skillet Chicken & Rice


Last night's dinner was simply, quick, and good.  Everything you need, you probably have in your kitchen.  Chicken breasts, instant rice, black beans, instant rice, frozen corn and some Chili Powder and Seasoned salt.


Start by sprinkling some Chili Powder and Seasoned Salt on the chicken breasts.  Brown the breast in some oil.  Once the chicken breasts were  browned, I removed them to a plate and stirred in the beans, tomatoes, corn, rice, water and some more seasoning in the skillet.   Then I nested the chicken breasts in the rice, covered and brought to a boil.   Once it was boiling (it doesn't take long) I reduced the heat and cooked for about 10 minutes.  The recipe stated 5 minutes but the rice and chicken weren't quite cooked yet.  Let the dish sit for about 5 minutes and serve.

That's all there is to it.  Your Skillet Dinner is ready to enjoy.

Southwest Skillet Chicken & Rice

Ingredients

2 teaspoons  Chili Powder
2 teaspoons  Seasoned Salt
1 1/2 pounds boneless skinless chicken breast halves
1 tablespoon oil
1 can (15 ounces) black beans, drained and rinsed
1 can (14 1/2 ounces) petite diced tomatoes, drained
1 cup frozen corn
1 cup instant white rice
1 cup water

Directions

1. Mix chili powder and seasoned salt in small bowl. Sprinkle chicken with 1 teaspoon of the seasoning mixture.
2. Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 minutes per side or until lightly browned.
3. Stir in beans, tomatoes, corn, rice, water and remaining seasoning mixture. Bring to boil. Reduce heat to low; cover and simmer 5 minutes or until chicken is cooked through and rice is tender. Let stand 5 minutes. Cut chicken into serving size pieces. Fluff rice mixture with fork before serving.

Serves: 6
